The beautiful beet is loaded with potassium, betaine, magnesium, folate, and Vitamin C with a healthy dose of fresh herbs, high in vitamins A and K. Add in beans, rich in calcium, magnesium, and fiber….do we need to go on with how healthy this salad is? The big bonus is how good it tastes! And easy on the wallet too!
6 beets, roasted (buy the ones already prepped) + chopped
2-3 oz (vegan) feta
1 can beans of choice, drained (I used a variety can, but you’re welcome to use whatever is your fave)
2 tablespoons apple cider vinegar
¼ cup avocado oil
1 tablespoon nutritional yeast
1 teaspoon salt
4 green onions, chopped
2 tablespoons lemon or lime juice
2 cups chopped fresh herbs (I used dill, cilantro, basil, and mint)
1 cup chopped spinach
½ cup chopped nuts of choice
Easy as 1-2-3 — assemble and eat! Feeds 3-4 detoxing bodies!
